So many I don’t know where to start, the National film board of Canada has plenty of animated short films and documentaries that are completely free! https://www.nfb.ca/ . I really enjoy Madame Tutli-Putli, really great stop motion animation. CBC gem also has some great picks as well.
Noel Noel lives rent free in my head. And Black Fly. And so many others. Many of these are on YouTube, NFB is one of my favorite channels.
Pontypoole is a superb indie horror movie set in a small town community radio station during a zombie outbreak. I hate most zombie movies, and I love that movie. One of the most unique takes on the genre I've ever seen.
In terms of more well known Canadian directors, David Cronenberg and Denis Villeneuve are both absolute masters. A significant chunk of Cronenberg's ouvre is made by Canadian studios, as is all of Villeneuve's work before Prisoners. I recommend giving Enemy a look, it's brilliantly weird.
Pontypool is fantastic, definitely one of the best films we've ever produced.
I enjoyed both Bon Cop/Bad Cop and its sequel. First one is about a Quebec and Ontario cop working a murder over a state line, second one involves the US a bit. And Menteur (you can find it as Compulsive Liar if searching in English), where a guy who lies constantly wakes up one morning and everything he's lied about is true. It's got a sequel with one of the characters that comes out this week, I think.
I found the plot of both movies rather trite, but the characters (and actors) were superb!
Oh yeah. Don't go into these expecting Citizen Cane. They're a vehicle for jokes.

Isn't Humanist Vampire Seeks Consenting Suicidal Person Canadian? That movie was great! The Wrong Guy made me laugh my ass off, back in the day, but I don't know if it'll hold up.
Foolproof is a pretty good heist movie starring Ryan Reynolds.
I recently watched this film and loved it: https://en.wikipedia.org/wiki/Universal_Language_%282024_film%29?wprov=sfla1 . Big Wes Anderson vibes with lots of weird surreal comedy, and features lots of good bits of ephemera.
And as steever mentioned earlier, the national film board of Canada is a good start!
Heater.
It's about being homeless in Winnipeg, well, it's about the lives of 2 homeless men in Winnipeg who are trying to return a heater to a store for money.
It's not the fastest-paced movie ever made, nor does it have a high budget, but I really enjoyed the film
