How much dry pasta per person by weight?
Approximately .69 grams per kilogram should do it.

Yes, overserving pasta is pretty common
you're saying I'm eating too much? for context this is when I'm only adding sauce and nothing else because a courgette alone is already too large to eat by myself

I do 150g with a light sauce, like aglio e olio or chili oil. Maybe 75g if it's going with a bunch of veg and meat.
A quarter or a third of a 500g pack depending on how hungry you are, 125g or 166g. In an Italian menu no more than 100g as a "primo", where the pasta dish is one of two main dishes and you are supposed to eat bread as a filler.
