I think the Borg Cube wins, but only to set up Kirk and McCoy getting Borg-ified and turned into a new Movie Menace that Picard, Sisko, and Janeway have to team up to defeat.
By "defeat" surely you mean talk them back to their humanity, resulting in some sort ot shenanigans scored by Michael Giacchino.
Eventually. But not before Riker, Worf, and Chakotay square off with Borg Kirk and punch each other a few times.
Lol, as if the Borg could assimilate Shatner's 1979 silky greasy coked up and permed sex appeal.
The Borg Queen would suddenly find herself in fuzzy focus, drapped in gausey polyester, smooching on Kirk.
Meanwhile, Scotty's hotwired that shit, has knocked out the drones, and is flying it around the sun at warp 9 to go back in time so he don't gotta deal with that mess.
I don’t think I would bet against any space worthy vessel that contains Montgomery Scott….
Worst case scenario he drinks a drone under the table and then loots all the shiny tech to make something clever.
While Kirk “distracts” the queen by sleeping with her. She probably thinks it was the easiest implantation ever, but whatever.

While Scotty adapts þe shuttle to be able to do warp 12 and fire a single pulse from a subatomic disrupter cannon, which can one-shot a Borg cube.
