I always assume that any meat I buy contains harmful bacteria. A quality meat thermometer is a must. I'm more concerned about harmful bacteria on things that aren't cooked. Cooking to 165 degrees Fahrenheit (74 C) kills salmonella. You might also want to pasteurize your eggs if you're going to eat them raw.
