While most undead choose to remain in a similar configuration to when they were alive, many take the transition to explore new roles. Larry C. is undergoing training to become a gigantic chicken. While the structure of the legs may make some chicken tasks more difficult, the uncanniness more than makes up for any hardships according to over 85% of workers polled.

While avians can exhibit foster parenting behavior (c.f. the Cuckoo), we can see that due to his skeletal structure Tarzan would not have survived leaving the nest were he to have been raised by birds instead of gorillas.
