In the first phase I'm going to host us in my social club. TLSC is a private, self hosted and invitation-only instance of Discourse. It's an experiment in creating something like a private LinkedIn, so should fit the purpose. I want to avoid the overhead of running another service so this can be our forum, unless people bring something better.
Actually my wife and I do self-host a Matrix server too. We use it to chat and call (mostly sharing links and grocery lists), but I don't think it's a great platform for organizing communities. Like other similar products it tends to get chaotic and noisy, and it's very difficult to find what was said even few hours before. Good for real time communication, but not so much for thoughtful work or organizing information.
I'm not in Europe, but I love your manifesto and how you footnoted it. I think it's downright perfect.
I hope you share how the project goes, including any challenges. I have a fantasy of starting a coop in my region and I'm sure I'm not alone. Having an example to follow (including potentially mistakes to avoid) would be a great resource.

I don't see much reason why we shouldn't operate in Canada too. One day it might be Europe anyway ๐ We will have to discuss it when I gather some people. But if you want to try working with us and have some spare capacity, you are welcome to join.
