I mean no one really cares that Zendaya plays MJ Watson in the MCU and doesn't match up with her comic book appearance.

That being said if you're adapting a character, that characters appearance is part of the discussion on what to adapt, and superficial things like hair are easy to change. If you change too much of a character, you might instead consider just creating/using a different character.

I don't think anyone cares if Sadie Sink is a redhead, blonde, brunette, neon green with blue streaks head. But right now, she's a redhead, so people assume a redhead character.

Emma Stone, as you pointed out, is a weird one because she was also known as a redhead, who is naturally blonde.
